Taco Bell Food Poisoning Lawsuit

The illness after eating contaminated food at Taco Bell depends on what made you sick. The two events documented on this page, a 2026 Cyclospora outbreak and a 2006 E. coli outbreak, come from very different germs with different symptoms and timelines.

Cyclospora

Cyclospora is a microscopic parasite, not a germ you can rinse off or a bug that passes in a day. It causes frequent, sometimes explosive watery diarrhea, loss of appetite, weight loss, cramping, bloating, nausea, and a fatigue that lingers. Symptoms usually start about a week after exposure, and without the right antibiotic they can last a month or longer and return after they seem to fade.

E. coli O157:H7

E. coli O157:H7 produces Shiga toxin and can cause severe stomach cramps and bloody diarrhea, usually 3 to 4 days after exposure. In young children and older adults it can lead to hemolytic uremic syndrome (HUS), a serious kidney complication that may require dialysis.

At-Risk Groups

Young children, older adults, pregnant women, and people with weakened immune systems face the highest risk of serious illness. Get medical care for bloody diarrhea, a high fever, signs of dehydration, or diarrhea that drags on for more than a few days.
