During the inspection the inspectors saw staff handling dirty dishes and then serving fresh food without washing their hands and employees touching ready-to-eat food with their bare hands – one inspector even saw the cook switch from working with raw food to ready-to-eat food without washing his hands. Some of the most severe violation’s included raw tuna being stored with over cooked shrimp and tortillas, a build-up of old food debris and dirt on oven mitts, and food being stored at unsafe temperatures.
